Hey there! I hope you are all staying cool through this ridiculous heat wave! Iโve decided to stay inside, sip cherry limeade, and ponder why my produce seems to go bad so quickly! Fun times, right?
This is just a quick note to let you all know that Iโm guest posting over at Bluebonnets & Brownies today while Amber is taking a little time away from her blog. These Lime-Coconut Cupcakes were the product of me purchasing a HUGE bag of limes from Costco and having nowhere to store them. They are fun, delicious and the perfect flavor combination for summer.

Iโve never tried the lime coconut combo in cupcakes before, but they look and sound amazing!
Ah yesโฆthe Costco inspiration; happens to me a lot! I made a key lime pie a couple of months ago but did not have the right milk in my cupboard (surprised I didnโt have 6 cans of it because of that connection!). I used coconut milk instead and it was the best have to make it differently than planned result ever. Iโll bet these are just as great and thank you very much, that song will now be in my head all day long!

Sheโs a tupperware consultant. I buy produce at BJs now that my strawberries can be in my fridge for over 17 days without going bad. I know buy 6 lbs of strawberries at a time, oranges, apple, carrots, celery, grapes, peaches, and other fruit every 2-3 weeks, depending on how fast we go through them. Peppers, spinach, onions, lettuce, green beans about every 3-4 weeks! Iโve save at least $250 per month on groceries!
